Norma’s means authentic mobile meals

Ask Norma Lopez, of Norma’s Catering in Pauls Valley, Okla., why she continues to cook for her customers, and her response is heartfelt.
“It makes me happy,” she said.
Since 2004, Norma has parked her mobile kitchen adjacent businesses in the community, and served food inspired by her country of origin.
Although she prepares a variety of dishes, her authentic El Salvadorian Pupusas (pron. puh-pooh-sus) have made her famous with the area’s residents.
The tortilla-like fare consists of a cheese, refried beans, and meat mixture sealed inside a corn meal exterior.
According to Norma, it’s not uncommon to see dozens of pupusas leave her catering truck during a lunch rush.
“Sometimes, it’s 60 a day, (and) sometimes it’s 30,” she explained. “We sell out (often).”

In addition to her pupusas, Norma also serves foods inspired by her ties to Mexico: soft tacos, burritos, tostadas, and tortas; each prepared fresh, and each by hand.
The torta is a toasted sandwich complete with grilled beef and onions, refried beans, lettuce, tomato, sliced avocado, and a cream based sauce. Each torta costs $4.
Food items range in price from $1.50 – $4, tax included.
Norma’s Catering is located next to Covercraft on Mondays, and Thursdays from 10 a.m. – 12:45 p.m. She can also be found on the Edwards Canvas Inc. parking lot on Fridays from 11a.m. – 12:45 p.m. Both businesses sit alongside State Highway 77 (north edge of Pauls Valley).
