Grilled Sweet Corn Salad

Grilled Sweet Corn Salad

Ingredients:

  • 12 whole ears of fresh sweet corn
  • 3 cloves of fresh garlic
  • 2 teaspoons of chipotle powder
  • 1 large red bell pepper
  • 1 large yellow (or orange) bell pepper
  • 1 large red onion
  • 1 large lemon
  • 1 large lime
  • bunch of fresh cilantro
  • ground black pepper to taste
  • sea salt to taste

Note: Wang added the salt, pepper, and chipotle powder while making this dish. He said to “season in layers” when preparing anything comprised of multiple ingredients. He explained that ingredients are perfected when seasoned during the preparation process versus waiting to season at the end.

First, grill the ears of sweet corn (brushed with oil) over medium heat on a grill.

Then, chop and toss together the garlic, peppers, onion, and cilantro in a large mixing bowl.


Next, remove the corn from the grill and allow to cool slightly in a separate bowl.

Then, cut the grilled ears of corn into halves and relocate back into the bowl.

Next, “bald” the corn (remove the kernels from the cob) using a sharp knife. Set the kernels aside.

Finally, add the corn to the salad mixture.

Toss all of the vegetables together (stirring from the bottom of the dish toward the top).

To finish the dish, slice and squeeze the lemon and lime juices over the salad.
